Phuket's only Vietnamese restaurant on its east coast is set against the backdrop of Royal Phuket Marina with luxury yachts and residences and the boardwalk in view. Vietnamese food is considered one of the healthiest in the world because it is low on oil and high on fresh herbs and vegetables. Dishes from this healthy cuisine at Madame Saigon include Bo La Lot, beef in betel leaf; Chao Tom, minced prawn and pork on lemongrass skewers; Nem Mua Ha, 'summer rolls' of crispy raw vegetables, aromatic herbs and cool noodles wrapped in a translucent soft rice wrapper; Pho Bo, classic Vietnamese noodle soup with beef; and Bo Luc Lac, stir-fried 'shaking' beef seasoned with black pepper.
