What is the white spot on salmon?

According to experts, it's a harmless protein called albumin. It is not visible on raw salmon, but it becomes evident on salmon skin when you cook it. It forms a gooey white texture on the skin, but it is completely healthy and has zero side effects. (Image: istock)

​How to remove the white stuff

Never cook salmon too quickly, or overcook. The best way to avoid white stuff on salmon is to use the technique of brining. In this method of cooking, the albumin level is reduced naturally, as the salt breaks down the muscle fibers of the fish and keeps them from squeezing out the protein. Also, the other way of avoiding white stuff is to oven-roast it. Make sure that salmon is cooked at medium heat of 125°F. (Image: istock)

How to check if salmon has gone bad

If the salmon has an awful smell or muskiness, then avoid using that salmon. Another way to check the freshness is to look it over. If the salmon is reddish when it’s raw and turns pink, when it has been cooked, then it’s fine.
