200 g chow mein noodles, 2 eggs, 2 tbsp oil, 1 tbsp chopped garlic, 1 tsp chopped ginger, 1 green chilli, 1 small onion, ½ cup cabbage, ¼ cup capsicum, 2 tbsp soy sauce, 1 tbsp green chilli sauce, 1 tbsp red chilli sauce, 1 tsp vinegar, ½ tsp black pepper powder, salt to taste, and spring onion for garnish

Boil 4 cups of water with salt and oil in it. Add noodles and boil until just al dente. Once done, rinse with cold water, and toss with a few drops of oil.

Heat a wok and add 1 tbsp oil. Crack in the eggs, season lightly with salt and pepper, and scramble quickly.

In the same wok, add remaining oil and sauté garlic, ginger, and green chilli on high flame for a few seconds.

Add onions, cabbage, and capsicum and stir-fry on high heat to keep them crunchy.

Now, add soy sauce, green chilli sauce, red chilli sauce, vinegar, and black pepper. Toss well.

Next, add the noodles and scrambled eggs. Toss on high flame for a minute or until all ingredients are evenly coated.

Garnish with spring onions and serve hot along with some chilled coke.
