Method

Set the ginger slices in a saucepan with 2 cups of water. Bring to a boil, then lower the heat and let it simmer for 30–40 minutes, until the ginger turns tender. Drain, keeping aside half a cup of the liquid. Return the ginger to the pan with honey and the reserved liquid. Stir gently over medium heat until the honey thickens into a syrup and coats the slices. Keep cooking until it reduces and the pieces pull apart. Spread them on parchment, dust lightly with sugar or salt, and leave them to cool. Once dry, store in a jar, where they will keep for weeks.
