Ingredients mark the notch



​Brands emphasize key ingredients in goods to attract consumers. According to reports, 28% of US and Canadian respondents always read the ingredients on a product, with protein being the most selected for nearly half. Proteins benefit muscle growth, energy, stamina as well as weight management, and has become a personal favorite. Brands guide consumers through stories and images about the value of these 'star' ingredients. They highlight sourcing and health benefits, and spotlight historic ingredients like ‘ancient grains.’ Hence, it makes the buyer feel they are getting value for money on their purchases.

​The chef's newcomer to all their kitchens, and a relatively unlikely culinary star, is the fig leaf, the common part of the fruit we wouldn't dream of eating raw but its sweet, creamy, and herbaceous flavor can be infused into oils and dairy or made as syrups for cocktails. The hottest 'hot sauce'



​The hype around hot sauce has been building up over the years, but retailers are now reporting a huge jump in demand right now. As per reports, sales have risen by as much as 55%, and independent specialist retailer Hop Burns & Black reports an enormous 94% increase. Why now? The trend of using hot sauces in home cooking garners a quick flavor hit, whereas Hop Burns & Black believes, "demand has been driven by the growing interest in world cuisine, and the desire to explore flavours from around the world". The retailers attribute a huge chunk of this madness to a YouTube show called Hot Ones, in which celebrities are interviewed while they eat chicken wings doused in sauces back-to-back that get progressively hotter.

Alternative milk markets evolve



​Dairy-based milk is no longer something that consumers buy, they are stocked up, with oat, flax, and cashew milk in significant volumes at their stores. Reportedly, more than 80% show interest and over 40% of households in the United States are currently buying plant-based milk. The international market for milk substitutes was valued at $29.18 billion and is likely to grow at a 12.6% CAGR through 2030. US non-dairy milk sales rose by over 11% from 2022 to 2023. This shift is based on growing health and environmental concerns and plant-based milks are increasingly becoming a staple household item for many.

Mushrooms are the new meat substitutes



​Specialty mushrooms are increasingly on flavor as a meat alternative. Reports tell that sales have surged nearly 20% over the past 10 years, with grocery retailers selling over 270 million pounds annually. Consumers are greatly opting for brown and specialty mushrooms such as portobello, shiitake, lion's mane, button, and oyster. Sales of these increased by 63% from 2012 to 2023. Popular for their meaty texture and umami flavor, mushrooms appeal to 82% of people, who are curious about plant-based proteins and 90% who are interested in mushrooms.

​ Eating and blending different national cuisines to create new, more exciting food items is the new normal across the country currently. For example, wafu Italian, which is a blend of Japanese and Italian food, or Mexican-Korean fusion tacos are also popular. Chefs are getting creative about experimenting with ingredients and techniques from other parts of the world in creating unique dishes that tell a story of cultural harmony.
