Simple and healthy buttermilk recipes

As per experts, one cup serving of buttermilk contains 110 calories, 9 g protein, 3 g fat, 13 g carbs, and less than 1 g fibre. It is rich in vitamins, minerals and probiotics that are considered good for the gut during the summer season. It is rich in vitamin A, which plays a crucial role in boosting the immune system and also keeps the heart, lungs and kidneys healthy. During summer months when you often feel less on energy, buttermilk gives you instant energy and riboflavin present in buttermilk regulates the amino acids, which make up proteins in the body. ​Buttermilk Sambar

Pressure cook 1/2 cup toor dal with 1 tbsp turmeric powder, ½ cup bottle gourd, and salt to taste. In a blender combine 1/2 cup grated coconut 2 green chilli, 1 tbsp mustard seeds, and water. To this paste add 1/2 cup buttermilk and salt. Mix well and set aside. In a pan make a tempering of coconut oil, mustard seeds, and curry leaves. Add cooked dal and coconut and buttermilk mixture. Cook on a medium flame for 10 mins, adjust salt if required. Serve hot with rice. (Image: istock)

​Buttermilk and Sooji Cheela

In a mixing bowl, add ½ cup sooji, 4 tbsp besan, 1 cup butter milk, salt to taste, ½ tsp black pepper powder, ½ tsp turmeric powder, 2 chopped green chilli, 1 chopped onion, ¼ chopped capsicum and mix well. Allow it to rest for 15 minutes. Make cheela on a greased pan and cook till it turns golden brown in colour. Serve hot with green chutney. (Image: istock)

​Buttermilk Kadhi

In a blender, add ½ cup besan, 1 cup buttermilk, salt, 1 tbsp turmeric powder and blend. In a hot kadhai add 2 tbsp mustard oil, 1 tbsp paanch phoran, 2 dry red chilli, and 6-8 curry leaves. Allow them to splutter, add the besan and buttermilk mixture. Cook on low flame for 15-20 mins, keep stirring. Your Buttermilk Kadhi is ready.

​Buttermilk Idli

Soak 2 cups of roasted sooji along with 2 cups of buttermilk. Allow it to rest for 15 minutes and then add extra buttermilk if needed, and 1 t/2 tsp baking soda. Your instant idli mix is ready. Add salt to taste, mix well, and pour the batter in idli make and steam. (Image: istock)

​Piyush

Blend 2 cups shrikhand, 2 cups buttermilk and 2 cups milk. Next add powdered sugar to taste, 1 tsp cardamom powder, 1/2 tsp nutmeg powder and 1 tbsp saffron water. Blend again and serve, with garnish of nuts. (Image: istock)

​Buttermilk Drink

It's the most simple and popular recipe that keeps the digestive system at ease. Take a glass of buttermilk, add 1 tbsp roasted cumin seeds, salt to taste, 1/2 tsp black pepper, some fresh coriander leaves and stir. Serve fresh. ​Buttermilk & Rice

This sounds and looks more like curd rice. All you need to do is, in a mixing bowl, add 1 cup cooked rice, 1 cup buttermilk, salt to taste, ½ chopped cucumber, ½ onion, 2 tbsp roasted peanuts, tbsp pomegranate seeds, ½ tsp black pepper, ½ tsp black salt and mix well. Add a tempering of 1 tbsp peanut oil, 6-8 curry leaves, 2 dry red chillies, and 1 tsp mustard seeds. Serve. (Image: istock)
