If there is one dish that represents Singapore in its composition, it would be rojak—a melange of flavours and ingredients. Malay for ‘mixture’, rojak is a complex salad that manages to hit all the right sweet, salty and spicy flavour notes. Every version is slightly different, almost always including a mix of pineapple, cucumber, sweet turnip, mango, dough fritters and soybean cakes, tossed in a shrimp paste dressing and topped off with crushed peanuts. It’s a riotous, refreshing mix of fresh flavours that work well as a finale to a heavy meal.
