The brains behind this operation are a father and son team that not only runs this pop up but also designs and crafts charcoal barbeques. The pork is so good due to the fact that it is cooked for hours in a bespoke oil drum barbecue. You can find these two at various Edinburgh markets on the weekends as well as they have started showing up in different restaurants and bars for some ‘takeover’ days. For a small price, you can have one of the most delicious sandwiches you have ever tried. We suggest grabbing a few extra napkins though as this tends to get messy.
