A butchery or butcher shop is probably not the place you would go but at Cochon, the squeamishness is quickly shoved aside as you enter. It’s a butchery alright, but it is also a sandwich shop and a wine bar which is modelled on old world covered meat markets. It sells house-made meats, sausages, fresh cuts and terrines, but it is specifically known for its boudin, a Cajun speciality which is a kind of white sausage with pork, dirty rice and spices. It’s a butchery alright, but it is also a sandwich shop and a wine bar which is modelled on old world covered meat markets. It sells house-made meats, sausages, fresh cuts and terrines, but it is specifically known for its boudin, a Cajun speciality which is a kind of white sausage with pork, dirty rice and spices. It is eaten as a whole meal in itself and can be had at any time of the day, including breakfast. The Cochon version, which is also available in turkey, is rich, fresh, wholesome and tingles on the palate from the assortment of spices.
