You're watching as the Sun, a bright disc, disappears into the blue sea, shimmering over the waters as it goes down. In the distance, you can hear the sound of metal clanking over metal, almost rhythmically. That's the sound of kottu being made. For the uninitiated, kottu is a popular street food in Colombo. It is made from day-old roti mixed with eggs, meat, onions, and spices, all blended together on a tava with expert hands.

While you can find the dish at various places across Colombo, one of the best places to sample it is at the Galle Face Green. Often, a small crowd of foreigners gathers to watch the chefs at work. A delicious snack that comes with a gorgeous view; could you really ask for more?
