Easy Broccoli and Almond Soup recipe

If both kids and adults at home avoid eating broccoli at home, here we have got a comforting winter soup recipe that will make them start loving this cruciferous vegetable. Made with broccoli, almonds, milk, and minimal spices, it is a nutritious soup dish that can be easily made at home and make for a comforting and light dinner too. For the unversed, broccoli is rich in vitamin C, known for its immune-boosting properties, and vitamin K, which is crucial for bone health. Also, it is rich in fiber that helps promote digestive health. As per a study published by the National Library of Medicine, broccoli also supports cardiovascular health. A Phase 1 clinical trial demonstrated that consuming 100 grams of fresh broccoli sprouts daily over a week provided cardiovascular benefits. And almonds on the other hand are rich in healthy fats, protein, vitamin E, and magnesium, supporting heart health and sustained energy. Take a look at this simple recipe.

Ingredients required


1 medium broccoli, 10–12 almonds, 1 small onion, 2–3 garlic cloves, 1 tbsp olive oil, 1 tbsp butter, 2 cups vegetable stock, ½ cup milk, salt to taste, 1 tsp black pepper, a pinch of nutmeg, a few almond slivers for garnish

First of all, soak the almonds in warm water for 20 minutes and remove the peel.

Blend with a little water into a smooth paste. Keep it aside.

Heat olive oil and butter in a pan. Add the chopped onions and garlic and sauté until soft and fragrant.

Now, add the chopped broccoli and sauté for 2–3 minutes. Once done, add vegetable stock, cover, and cook for 8–10 minutes or until the broccoli florets turn tender.

Let the mixture cool down and then blend until smooth and creamy.

Transfer the puree in the same pan and add almond paste and milk. Simmer for 3–5 minutes.

Season the soup with salt, black pepper, and nutmeg. Adjust the consistency with stock or milk. Garnish with almond slivers and a drizzle of olive oil. Enjoy with soup sticks or croutons.
