The art of making Watermelon Rice at home

Master Chef India 2023 finalist chef Harry shot to fame with his innovative and refreshing Watermelon Rice recipe that he prepared during one of the challenges that was judged by chef Marco Pierre White as a guest judge along with chef Kunal Kapur, chef Vikas Khanna and chef Ranveer Brar and the flavours of the dish impressed all the judges. Chef Marco Pierre White wad impressed with his selection of fruit and even asked him whether pineapple tastes better witth rice or watermelon and chef Harry's answer on the plate became a viral recipe. Ingredients


1 big watermelon, 1 cup basmati rice, salt to taste, 1 tsp coriander powder, 1 tbsp cumin powder, a pinch of cinnamon powder, 1/2 tsp red chilli powder, 2 tbsp olive oil, 2 tbsp olive oil, 2 tbsp pumpkin seeds, 1 tbsp nigella seeds, 1/2 tsp turmeric powder and coriander leaves

Step 1


Peel and cut watermelon in cubes and then blend into juice in a juicer or a food processor.

Strain the juice and measure 2.5 cups of juice and set it aside.

Wash the rice 2-3 times and set it aside as well.

Step 4


Heat an open vessel and add rice along with watermelon juice and oil to it. Stir gently and bring it to a boil.

Add salt, cumin powder, coriander powder, red chili powder, and cinnamon powder. Stir gently and cover and cook until it is ready.

In the meantime, prepare the tempering of olive oil, nigella seeds, pumpkin seeds and turmeric powder.

Add it to the rice along with coriander leaves and serve hot. Enjoy
