Naan Pizza

To make this pizza, preheat the oven to 200 degrees C. Next, take a baking sheet, line it in a baking pan and coat it with cooking spray. Next, put the naan on the prepared pan. Now, take a bowl and mix together 2 tbsp ricotta cheese, 1 tbsp pesto sauce and 1/2 tsp lemon zest in it. Place the mixture on the naan and spread it well leaving the centre as it is. Carefully, take an egg and crack it into the centre. Sprinkle 1 tbsp grated Parmesan cheese on the egg and let it bake until the naan is golden in colour. Cook for about 8-10 minutes when the egg white is set and the cheese is melted. Garnish as desired and enjoy the Naan Pizza.

Pesto Chicken Salad

Take a large heatproof bowl and add 50 gms of couscous to it. Add about 100ml of boiling water over it and stir in 1 tbsp pesto sauce. Keep aside for 8-10 minutes, it will swell the couscous. After 10 minutes, take a fork and stir the swelled couscous. Next, add 1 tbsp pesto sauce in it along with 2 tbsp low-fat yoghurt, and your favourite seasonings. Finally, add some leftover chicken or any other protein source, but make sure it's shredded along with a small bunch of basil leaves, 1 cup chopped cucumber and 2-4 sun-dried tomatoes. Toss well all the ingredients and then, take a bowl, make a bed of iceberg lettuce and transfer the salad. Add some pine nuts for that extra chunk and enjoy.

Sesame Noodles with Chicken

To make this dish, put a large pot over medium flame and boil 250 gms spaghetti in it. Add a little oil and salt while still boiling. Once done, drain and rinse the spaghetti noodles and transfer them to a large bowl. Then, put a saucepan over medium flame and combine together 2 tbsp dark sesame oil, 2 scallions, 1 tbsp each of minced garlic & ginger, and 1 tsp brown sugar. When the mixture starts sizzling, let it cook for 10-15 seconds. Next, remove from heat and stir in 1 1/2 soy sauce with 2 tbsp of ketchup. Stir well, and keep aside. On the other hand, put a saucepan over medium flame and cook about 250 gms of shredded chicken breast in some oil, and when done, turn off the flame. Add the noodles to this pan and pour the prepared mixture in it along with 1/2 cup carrots (julienned), 1/2 cup peas and 2 tbsp sesame seeds. Toss well all the ingredients and serve immediately.

Chhole Chawal

This is something all Indian mothers would love to have. To make this dish, first boil the 1 cup overnight soaked chickpeas in a pressure cooker for 5-7 whistles. Next, add some 4-5 green chillies along with 4-5 garlic cloves and 1-2 inch ginger piece in a grinder. Grind all the ingredients until a paste is formed, and once done, scrape down the sides. Next, add a red onion (chopped) in it. Start the grinder for a few seconds until the onion has the texture of being finely chopped. Now, put a kadhai or a large saucepan over medium flame and heat 5-6 tbsp sunflower oil in it. Once the oil is hot enough, add the onion mixture and cook for 3-5 minutes, stirring in between. When the onion is cooked, add 1 tsp coriander powder, 1 tsp cumin powder and 1/2 tsp turmeric in it, stir well and cook for another 2 minutes. Meanwhile, make a puree of 2-3 tomatoes in the same grinder (make sure that you had washed them with water) and add it to the pan. Finally, add some salt to taste and let the puree cook for 3-5 minutes while stirring occasionally. Now, add the boiled chickpeas to the puree and stir well. To finish the dish, add a sprinkle of garam masala on the top and cook on slow flame for another 5 minutes with a lid. Once done, turn off the flame and garnish with chopped coriander, serve with Jeera Rice and enjoy.

No-Oven Eggless Biscuit Cake

Take a large bowl and roughly crush any of your mother’s favourite cream biscuits in it. Next, add 1 cup of milk in it and mix well until it has a batter-like consistency using the cut and fold method. Then, add a packet of eno to it and mix very well. Finally, take a cake tin and line it with any oil that you commonly use in your household using a kitchen brush. Add some flour to it to make the tin completely ready. Pour the batter into this cake tin. Now, put a kadhai over medium flame and place a stand in it. Once the kadhai is heated well, add the cake tin over the stand and cover it with a lid. Now, let it cook for 304- minutes over low flame and check using a skewer if it's done. Once done, take it out of the cake tin using a spatula and transfer it to a plate. Use melted chocolate as a ganache and apply evenly over the cake, add some fresh Oreo cookies as the toppings and place it in the fridge for 30 minutes at least to set. Enjoy in the evening.
