Preservative-free Biryani Masala Recipe

Biryani is not just a dish, it is an emotion that many of us with every bite. It is a comforting one-pot dish that comes in both vegetarian and non-vegetarian form. And if we talk about the soul of this, it is the iconic Biryani ka Masala, which changes with every regional preparation. In a recent video on Instagram, celebrity chef Ranveer Brar shared a preservative-free Biryani Masala recipe along with exact measurement of spices. Take a look at the recipe.

Ingredients


10 gms coriander seeds, 5 gms cumin seeds, 15 gms black pepper, 2 gms javitri, 2 gms green cardamom, 2 pieces black cardamom, 1 gm cloves, 1 gm cinnamon stick, 4-6 bay leaves, salt to taste

Step 1


Dry roast coriander seeds until they turn aromatic.

In the same pan, dry roast cumin, black pepper, javitri, and both varieties of cardamom.

Now, add all the other leftover spices and dry roast them for 20 seconds.

Let all the spices cool down and blend them into a fine powder.

To make it even more flavourful, one can add dry rose petals to give your masala a royal treat.
