Chickpea and Cucumber Sandwich Recipe

Are you a vegetarian and looking for a power-packed Sunday breakfast? If yes, then give this Chickpea and Cucumber Sandwich recipe a try. Ingredients


1 cup cooked chickpeas, 2–3 tbsp plain yogurt, 1 tsp mayonnaise, 1 tsp lemon juice, salt and pepper to taste, 1 small cucumber, 4 slices whole-grain bread

First of all, mash the boiled chickpeas in a bowl.

To this, add curd, mayonnaise, lemon juice, salt and pepper. Mix well.

Now, spread the mixture onto two slices of bread.

Next, layer the sliced cucumber slices on top and add greens of your choice.
