Easy Gujarati Khandvi Recipe

Gujarati Khandvi is a light and traditional treat. Made with besan, buttermilk, and mild spices, it is rolled packet of flavours that relies on technique and make for a delectable breakfast dish. Scroll down to read the detailed recipe.

Ingredients

1 cup besan, 1 cup sour buttermilk, ½ cup water, ½ tsp turmeric powder, 1 tsp ginger-green chilli paste, salt to taste, 2 tbsp oil, 1 tsp mustard seeds, 1 tsp sesame seeds, 8–10 curry leaves, 2 green chillies, 2 tbsp fresh grated coconut, and 2 tbsp chopped coriander

To begin with, add besan, buttermilk, water, and turmeric in a mixing bowl. Whisk well.

Next, add ginger-chilli paste, and salt whisk until smooth and lump-free.

Now, pour the batter into a heavy-bottom pan and cook on medium flame, stirring in one direction until it thickens.

Quickly spread the hot mixture thinly on the back of greased steel plate or kitchen platform.

Allow it to cool slightly and cut into strips and gently roll.

Now, heat oil in a pan and add mustard seeds, sesame seeds, curry leaves, and green chillies. Let them crackle and switch off the heat.

Pour the tempering on rolls and garnish with grated coconut and coriander. Enjoy!
