Must-try snacks for Dussehra

The festival of Dussehra or Vijaydashmi is here and so is the time to indulge in some appetizing food with your family and friends. The festival of Dussehra brings back heaps of childhood nostalgia when we used to especially go to watch the Raavan effigies burn. The festival of Dussehra signifies the victory of good over evil, which is celebrated all across the country by burning Raavan effigies. Celebrate the auspicious occasion of Dussehra by preparing the below-given food items that are so easy to make and enjoy them with your loved ones.

Onion Pakora

Ingredients required- 1 cup besan, 1 onion, 1 teaspoon red chilli powder, 1/4 teaspoon carom seeds, 1 tablespoon sooji, ¼ teaspoon turmeric, 1/2 teaspoon dry mango powder, salt as per taste and oil for frying.

Method

  • Firstly chop the onions into thin slices and set them aside.
  • Now mix all the dry ingredients together like besan, salt, sooji, turmeric, red chilli powder, dry mango powder and carom seeds together. Now add water in batches and mix well to make a batter of medium consistency.
  • Add chopped onions in the batter and coat them well.
  • Now heat oil in a kadhai and keep it on medium flame. Add the coated onions to the oil and fry them until golden brown.
  • Once fried, serve the bhajias with mint chutney or tomato ketchup.

​Samosa

Ingredients required- 200 gm all-purpose flour, 2 boiled potatoes, 1/4 cup peas, 1 tsp red chilli powder, ½ tsp turmeric, ½ tsp garam masala powder, ½ tsp carom seeds, ½ tsp kasoori methi powder, ½ tsp dry mango powder, salt as per taste and oil for frying.

Method

  • Add flour to a bowl, along with salt. Add water in batches and knead to form a smooth dough. Keep the dough aside to rest for 30 minutes.
  • Meanwhile, prepare the potato stuffing. Heat oil in a kadhai and add cubed/mashed potatoes to it (pre-boiled).
  • Now add all the spices - red chilli powder, turmeric, salt, kasoori methi powder, garam masala powder and dry mango powder. Mix well and then add peas to it now.
  • Stir fry for 2-3 minutes. Once done, transfer to a bowl and keep the stuffing aside until required.
  • Now take out a small ball from the dough and roll it into a thin roti. Cut this in half and fold it into a cone-like shape. Add potato masala to the cone and seal the edges by using a few drops of water.
  • Place all the stuffed samosas on a plate and let them dry for 15 minutes.
  • Now put a kadhai over medium flame and add oil to it for frying. When the oil is hot enough, add the samosas and fry them till golden brown in colour.
  • Serve with chutney of your choice.

​Fafda

Ingredients required- 1 cups besan, 1 tsp red chilli powder, ½ tsp carom seeds, ¼ tsp turmeric, ¼ tsp baking soda, salt as per taste and oil for frying.

Method

  • In a bowl, add besan, red chilli powder, carom seeds, turmeric, baking soda, salt and 1 tsp oil.
  • Mix well and add warm water in batches and knead to form a very soft dough.
  • Drizzle a few drops of oil on the dough, cover the bowl with a damp cloth and let it rest for 15 minutes.
  • Now knead the dough once again properly and pinch out a ball from it.
  • Roll it a bit to make a cylindrical shape and place it on a wooden board.
  • Press it down just a bit to make its one side stick on the board.
  • Now press it with your palm and stretch it in the forward direction.
  • Scrape off the fafda with the help of a knife without damaging it.
  • Heat oil in a pan and fry the prepared fafdas until crispy.

​Paneer Tikka

Ingredients required- 400 gm paneer, 3 tbsp curd, 1 tsp lemon juice, 1 tsp red chilli powder, ½ tsp coriander powder, ½ tsp dry mango powder, ½ tsp cumin powder, ½ tsp kasoori methi powder, ¼ tsp black pepper powder, ¼ tsp garam masala, 2 tbsp oil and salt as per taste.

Method-

  • Cut the paneer into cubes and set them aside.
  • Now take a bowl and add curd to it. Now add lemon juice, red chilli powder, coriander powder, mango powder, cumin powder, kasoori methi, black pepper powder, garam masala and salt. Mix well to prepare a smooth masala mixture.
  • Add the paneer cubes to the masala and mix them well. Set the paneer aside for 15-20 minutes.
  • Now place a non-stick tawa on medium heat and drizzle 1-2 tbsp of oil on it.
  • Place the marinated paneer cubes one by one on the tawa and let them cook from one side until light brown in colour. Now flip towards the other side and cook for a few minutes.
  • Once cooked from all sides, serve the Paneer Tikka with mint chutney.

​Masala Rice

Ingredients required- 1 cup boiled rice, 1 capsicum, 1 onion, 1 carrot, 10 green beans, 3 tbsp peas, 1 tbsp garlic ginger paste, 2 tbsp oil, ½ tsp asafoetida, ¼ tsp cumin seeds, 1 tsp red chilli powder, ½ tsp coriander powder, ¼ tsp turmeric, ¼ tsp garam masala powder and 2 tbsp roasted cashews.

Method

  • Firstly chop all the veggies like onion, capsicum, carrot and green beans. Set them aside.
  • Now heat oil in a pan. Add asafoetida, cumin seeds and let them splutter for a minute. Now add onion, ginger-garlic paste and mix them. Let them saute for another one minute. Now add salt and give a mix.
  • Add all the veggies like carrot, capsicum, peas and green beans. Add turmeric, red chilli powder and coriander powder. Give a nice mix and cover the pan with a lid. Let the veggies cook for five minutes.
  • Lastly, add cooked rice to the pan and gently mix them with the masala. Add garam masala and give a final mix. Make sure you don't break the rice in the process.
  • Garnish with roasted cashews and serve.

​Malida

Ingredients required- 2 parathas,6 tablespoon powdered jaggery, 4 tbsp milk, ½ teaspoon powdered green cardamom, 6 tablespoon ghee and some crushed nuts.

Method

  • Break the parathas into small pieces or grind them into a coarse mixture.
  • Add in jaggery powder, milk, ghee and crushed nuts. Mix very well and serve!
