Made with the pulp along with spices, it is a filling and highly nutritious soup (when unstrained) that can be consumed as a meal. Let us take a look at the simplest recipe and five reasons to add this soup to the daily diet.

Beetroot is rich in nitrates, which convert into nitric oxide in the body. This helps dilate blood vessels, improving blood flow and lowering blood pressure. As per a study, beetroot juice is said to reduce both systolic and diastolic blood pressure and boost health.

It is said that beetroot helps with improved circulation of oxygen to the brain and in the form of soup, it may help improve focus, memory, and cognitive performance. As per a research, nitrates in beetroot increases cerebral blood flow, especially in the prefrontal cortex, an area important for higher-level cognitive functions like decision making and working memory.

How to make Beetroot Soup

Ingredients required: 2 beetroot, 1 onion, 2 garlic cloves, 1 carrot, 1 tbsp olive oil or butter, 2 cups vegetable broth, salt to taste, black pepper to taste, 1 tsp lemon juice, 2 tbsp fresh cream, and some coriander leaves
Method: To make this soup, heat oil or butter in a pan. Add chopped onions and garlic. Sauté until translucent. Add chopped beetroot and carrot and saute for 5 minutes. Pour in the broth and bring to a boil, then reduce heat and simmer for 5 minutes or until beets are tender. Let the mixture cool down and blend it into a puree. Transfer the puree to the pot, season it with salt, pepper, and lemon juice. Heat for another 2 minutes. Serve hot with a topping of cream and coriander leaves.
