Biryani is not just a dish, it's an emotion, cooked in layers with love, spices, rice, and meat, with lots of patience and calculation. And one small mistake or carelessness can destroy the whole experience. Patience, precision and respect for technique, makes biryani delectable. And keeping that in mind, here we have discussed 9 common mistakes one should avoid while making biryani at home.

Mistake 1: Overcooking the rice


When it comes to cooking rice for biryani, it shouldn't be fully cooked before layering. It should be 70–80% cooked before layering, as fully cooked rice turns mushy or might break during dum, resulting in soggy biryani.

Mistake 2: Using wrong rice


For biryani, short grain or broken rice are not apt. It is best to use long grain aged basmati for biryani to get the perfect-looking dish.

Mistake 3: Skipping rice soaking


Yes, soaking rice for biryani is necessary. Not soaking rice leads to uneven cooking and broken grains too, while soaked ones result in fluffier and longer grains.

Biryani is not just about spices. It is about creating the right balance. Hence, adding too many spices might overpower the dish and spoil it. So, be very calculative.
