This famous Indian sweet is made with ash gourd, also known as winter melon or white pumpkin. It is made by soaking the chunks in lime water, which is further boiled and then soaked in sugar syrup, until it becomes translucent and sweet. These days it comes in delicious variations like Angoori Petha, Kesar Petha, and Stuffed Petha as well.

Lauki Ki Halwa

This pudding-like sweet is made with grated bottle gourd, which is sauteed in ghee until moisture is released and is then cooked along with full-fat milk, sugar, nuts, and cardamom powder.

To make this Indian dessert, you need to grate beetroot, then saute it in ghee and cook until the rawness vanishes. To this, then milk, sugar and nuts are added and cooked until they are rich and flavourful.

Pyaaz ki kheer is also a unique dessert, which is believed to have roots in Mughal and Awadhi cuisine. It is made with finely chopped onions, milk, sugar, and rice. It is further topped with cardamom, saffron, and dry fruits.
