It was found that red spinach juice demonstrates potential as an effective adjunct or alternative to standard iron supplementation in improving hemoglobin levels in pregnant women with mild anemia.
How to consume: One can puree them and use in curry or for dough of parathas. They can also be consumed in salads after blanching them in salt water.

Beetroot

It is said that beetroot helps stimulate red blood cell production and improves blood circulation. A study has duly highlighted that there is a significant increase in hemoglobin levels after 3 weeks of twice-daily beetroot juice intake. The study also mentioned that other hematological parameters like mean corpuscular volume (MCV), mean corpuscular hemoglobin (MCH), and mean corpuscular hemoglobin concentration (MCHC) also showed slight improvement during the intake period, and concluded that beetroot juice can treat anemia by increasing hemoglobin efficiently without side effects.
How to consume: One can consume them in the form of juice, shake, smoothie, salad or soup. They also go well as snacks in the form of chips or fries and dips.

Pomegranate

They are packed with vitamin C, iron, and antioxidants that enhance haemoglobin levels. It is mentioned in the study that consuming 500 ml of pomegranate juice daily for 14 days can significantly increase red blood cell count, hemoglobin concentration, and hematocrit levels in healthy individuals. Studies suggest pomegranate juice may improve memory and cognitive function. Also, certain compounds may help reduce arthritis symptoms by protecting cartilage.
How to consume: They are best consumed as a fruit or one can blend into juice or consume them in soup or salad.

Legumes like lentils, chickpeas, and beans are also rich in iron, protein, and folate that makes them excellent for improving haemoglobin. A 2023 study has highlighted that consumption of fortified lentils helped protect iron status and resulted in higher hemoglobin (Hb) levels compared to control groups. It is also mentioned that lentils are rich in iron and bioactive compounds that can improve hemoglobin and iron status.
How to consume: One can easily make a delicious curry or flavorful kebabs with them and enjoy them as a wholesome snack or satisfying main course during lunch or dinner.

Nuts and seeds like almonds, pumpkin seeds, and sesame seeds are rich in iron, copper, and other minerals which are crucial for haemoglobin synthesis. According to a comprehensive study on seeds and nuts, it has been found that they are rich in iron. 100 gms of pistachios contain 3.9 mg of iron, while cashews contain 6.7 mg of iron. Almonds contain around 5.4 mg of iron per 100 grams and their regular consumption helps improve hemoglobin levels naturally.

How to consume: Simply roast them lightly with a touch of seasoning for a crunchy, satisfying snack, or soak them in clean water overnight to enhance digestion and significantly improve overall nutrient absorption naturally. They also pair wonderfully well with warm soups, hearty grain-based salads, or even blend seamlessly into rich, flavorful homemade curries for added texture, taste, and essential nutrition.
