How to make vegetarian dishes at home


The weather is changing and the rising mercury often makes us impatient in the kitchen. Hence, the idea is to wrap up cooking faster. So, keeping that in mind, we curated a list of 10 desi vegetarian dishes made with seasonal produce that can be prepared in under 20 minutes. Scroll down to read the details.

This is a famous side dish made with diced potatoes, cooked in a kadhai using mustard oil, cumin seeds, green chilies, salt, and turmeric.

Matar Paneer


This curry dish is made with diced paneer cubes cooked in a gravy of onion and tomato puree, spices, and is topped with fresh green peas that add subtle sweetness to your dish.

Parwal ka Bhujiya


This is a dry dish made with lengthwise cut pointed gourd which are pan-fried in a tempering of mustard oil, cumin, hing, green chilli, and onion. It is best enjoyed with paratha or dal chawal.

Lauki Chana Dal


This gut-friendly dish is made with chopped bottle gourd cooked in a cooker along with soaked chana dal, onions, and tomatoes. It also uses a pinch of garam masala, which adds to the flavour of the dish.

Aloo Chokha



This side dish is made with boiled and mashed potatoes seasoned with onions, salt, pepper, mustard oil, green chilies, lemon juice, and coriander leaves.

Baigan Bharta


Baigan bharta makes for a perfect side dish made with roasted smokey brinjal, mashed and seasoned with roasted dry red chillies, onion, lemon juice, salt, and pepper.

Aloo Tamatar ki Sabzi


This is a curry-based dish made with boiled potatoes cooked in a gravy of onion-tomato puree along with salt, pepper, turmeric, and garam masala. To make this, one can use boiled potatoes too, as it reduces the cooking time of the dish.

Bhindi Bhujia

This is a summer-friendly side dish made with chopped bhindi, cooked in a kadhai using mustard oil, cumin seeds, green chilies, onions, salt and turmeric.

Vegetable Pulao


This is a nutrient-rich one-pot rice dish made with soaked rice, cooked along with seasonal veggies like carrots, capsicum, onions, and peas along with spice mix in a pressure cooker. It is best served with curd. Also, this is a one-pot meal that can be made with a full bowl of nutrition, by adding protein sources like soy beans or paneer to it. Also, one can use pav bhaji masala or meat masala to enhance the taste of the dish.

Paneer Bhurji


It is a simple and easy side dish made with mashed paneer, cooked in a tempering of mustard oil, cumin, green chilies, and also uses onions, tomatoes, garam masala, and gram flour. It is best served with roti or paratha.

Curd Rice


This dish is made by mixing curd and leftover rice, seasoned with roasted peanuts, cucumbers, and onions, and seasoned with a tempering of oil, mustard seeds, curry leaves, and dried red chillies.

Besan Cheela


It is a pancake, which can be easily made by mixing besan, curd, water, veggies, turmeric, salt, and pepper. All you need to do is mix them together and cook on a greased tawa.
