Pesarratu



It's another pancake or crepe-like treat of Andhra region and is made with green gram, green chilli, ginger, garlic and herbs. It is a combination of two words Pesara which means green gram and Attu, which means dosa or crepe. Served with ginger chutney, this breakfast treat is heavy and filling.

Dosa


This is one of the most famous breads of South Indian cuisine. You can also call it a pancake! Made with a specific proportion of rice and dal, this crispy, flaky treat is stuffed with masala aloo and is served with sambar and chutney.

This super thin rice flour and coconut pancake is one of the lightest breads and calls for a lot of practice to make the perfect one. It is best served with south Indian stew or curry.

Another popular bread of south Indian cuisine is Uttapam. This savoury pancake is made with rice, lentils, onion, tomato, herbs and spices. It is often served as a breakfast delight with sambar and chutney.

Celebrated in Tanajavur district of Tamil Nadu, Adai is a pancake recipe made with toor dal, chana dal and urad dal. The best thing is, this batter doesn’t require any fermentation and can be made in a jiffy too.

Idiyapam



Idiyappam, also known as string hopper/ indiappa nool puttu, or noolappam, chomai, is a rice noodle dish of Tamil Nadu and Kerala. It consists of rice flour pressed into noodles, woven into a flat disc-like shape and steamed.

It's another bread variation made with steamed rice flour and coconut shavings. It is cylindrical in shape and is also stuffed with a sweet or savoury filling.
